Interstitial Cystitis Friendly Meals for Mom

That title was a mouthful, wasn’t it? Try pronouncing it!

Until my mother was diagnosed with interstitial cystitis, I’d never heard of it.

Interstitial Cystitis, or IC for short, is basically a chronic bladder condition described as experiencing severe pain in the pelvic region and incessant urges to use the restroom. Top that off with stinging sensations while urinating, and you’ve got yourself a doozie, my dear. If you don’t believe me, ask my mommy.

Unfortunately, for the past 5 years, my mother has been living with this incurable disease. Since she’s a trooper, she copes pretty well, but oftentimes, the pain becomes a bit unbearable. Therefore, thwarting all symptoms and alleviating all pain becomes priority.

One way she does this is by sticking to a fairly strict and highly alkaline diet. Thankfully, there are a few websites that offer a myriad of dietary choices and recipes she can choose from. For the most part, and despite the tastebuds they attempt to raise yet fall short, she’s pretty satisfied with the options they feature.

Then again, there are times when a bland sandwich just won’t cut it and only a salad drenched in Balsamic Vinaigrette will do the trick! This is, of course, where I step in with a variety of dishes curated with ingredients that are both savory and soothing to those with interstitial cystitis. Let’s get started!

For Breakfast

Rhythm and Blues-Berry Smoothie

Blend the following:

1 Banana

1.5 cups of Coconut Water

3 oz. of Blueberries

To make my mother’s breakfast more filling, I opted to make Pumpkin Spice Granola Clusters (not pictured cuz we ate them all!). You can find the recipe here. Keep in mind, I substituted dried cranberries for raisins - it was still yummy regardless!

We took a nap for lunch!
